1 tsp. olive oil

2lb. loin of pork

3 cloves of garlic

2 tsp. of dried herbs (oregano, thyme, rosemary)

Salt and pepper to taste


1. Preheat the oven to 350°F (175°C).

2. Heat the olive oil in a large oven-safe skillet over medium-high heat.

3. Rub the pork with the garlic, herbs, salt and pepper.

4. Sear the pork on all sides until golden brown, about 1-2 minutes per side.

5. Transfer the skillet to the preheated oven.

6. Roast the pork for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

7. Remove the pork from the oven and let it rest for 10 minutes before slicing and serving.
