– 2 tablespoons of butter or margarine
– 2 tablespoons of olive oil
– 1 pound of white mushrooms
– Salt and pepper to taste
– 2 cloves of garlic, minced
– 1 teaspoon of thyme
– 2 tablespoons of white wine
– 2 tablespoons of chopped fresh parsley


1. Heat the butter and olive oil in a large skillet over medium heat.

2. Once the butter is melted, add the mushrooms, salt and pepper. Cook the mushrooms for 5 minutes, stirring occasionally, until they are softened.

3. Add garlic, thyme, and white wine. Cook for 3 more minutes, stirring occasionally.

4. Remove the skillet from the heat and stir in the parsley. Serve warm.

– For a richer flavor, you can substitute the butter for bacon fat or duck fat.
