How To Cook Scrapple

• 2 pounds pork shoulder, cut into small cubes
• 1 teaspoon kosher salt
• 1 teaspoon freshly ground black pepper
• 2 cups chicken stock
• 1 cup cornmeal
• 1/2 cup all-purpose flour
• 2 tablespoons minced onion
• 2 tablespoons minced fresh parsley
• 1/4 teaspoon ground sage
• 1/4 teaspoon ground thyme
• 2 tablespoons butter
• 1/4 cup apple cider vinegar


1. Preheat oven to 350°F.

2. Place the pork shoulder cubes in a large saucepan. Add the salt and pepper, and cover with the chicken stock. Bring to a boil, then reduce the heat and simmer, uncovered, for 45 minutes.

3. While the pork is cooking, in a medium bowl, combine the cornmeal, flour, onion, parsley, sage, and thyme.

4. Drain the pork and discard the liquid. Stir the pork into the cornmeal mixture until well combined.

5. Grease a 9×13-inch baking dish with the butter. Spread the pork mixture into the dish and bake for 30 minutes.

6. Remove from the oven and let cool for 10 minutes. Cut into squares and serve with the apple cider vinegar.
