Ingredients

– 1 large rutabaga
– 2 tablespoons olive oil
– Salt and pepper, to taste
– Optional: 1 tablespoon of butter

Instructions

1. Preheat oven to 400°F.

2. Wash the rutabaga and cut off the ends. Peel the rutabaga with a vegetable peeler. Cut the rutabaga into 1/2 inch cubes.

3. Place the cubes on a baking sheet and drizzle with olive oil and season with salt and pepper.

4. Roast in the oven for 30 minutes, stirring halfway through.

5. Optional: For added flavor, add 1 tablespoon of butter to the baking sheet when you take it out of the oven and stir to coat the cubes.

Serving

Serve warm as a side dish or use in salads and soups. Enjoy!
