Ingredients

1 large rutabaga
2 tablespoons extra virgin olive oil
Salt and pepper, to taste

Instructions

1. Preheat the oven to 375°F (190°C).

2. Peel the rutabaga, then chop into cubes of roughly the same size.

3. Place the cubes in a large bowl, then add the olive oil, salt, and pepper. Toss to coat.

4. Spread the rutabaga cubes on a baking sheet, then bake in the preheated oven for 40 minutes, stirring occasionally.

5. When the rutabaga cubes are golden brown and tender, remove from the oven and enjoy!
