– 2 cups uncooked long grain white rice
– 2 tablespoons vegetable or olive oil
– 2 ¾ cups chicken or vegetable stock
– ½ teaspoon salt


1. Heat the oil in a medium saucepan over medium-high heat.
2. Add the rice and stir to coat with the oil.
3. Toast the rice, stirring often, until it is golden brown.
4. Add the stock and salt and bring to a boil.
5. Reduce the heat to low, cover, and simmer for 20 minutes.
6. Remove the pan from the heat and let it sit, covered, for 5 minutes.
7. Fluff the rice with a fork before serving.
