Ingredients
– 1 cup red lentils
– 1 teaspoon vegetable oil
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon turmeric powder
– 2 tablespoons tomato paste
– 4 cups vegetable stock
– 1 tablespoon lemon juice
– Salt and pepper to taste
Instructions
1. Rinse the lentils in a fine-mesh strainer until the water runs clear.
2. Heat the oil in a large saucepan over medium heat. Add the garlic, cumin, coriander, and turmeric and cook, stirring, for 1 minute.
3. Add the tomato paste and stir to combine.
4. Add the vegetable stock and lentils and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.
5. Stir in the lemon juice and season with salt and pepper to taste.
