How To Cook Red Beans

1 pound dry red beans, soaked (see soaking instructions below)
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
1 teaspoon dried oregano
1 teaspoon dried thyme
2 bay leaves
1 teaspoon smoked paprika
4 cups water or vegetable broth
1 teaspoon salt
Soak: Place the beans in a large bowl and cover them with cold water. Allow to soak overnight, or at least 8 hours.
Cook: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, bell pepper, garlic and dried spices. Saute for about 5 minutes, or until the vegetables are softened.
Add the soaked beans, 4 cups of water or broth, and salt. Bring to a boil, then reduce the heat to low and simmer, covered, for 1-2 hours until the beans are tender.
Season: Taste and adjust the seasonings as desired.
Serve: Serve the cooked beans over cooked rice or with your favorite sides. Enjoy!
