Ingredients

– Rabbit
– 2 cloves of garlic
– 2 tablespoons of olive oil
– 1 cup of white wine
– 1 onion, diced
– 1 teaspoon of dried oregano
– 2 tablespoons of tomato paste
– 2 cups of chicken broth
– 1/2 teaspoon of freshly ground black pepper
– 2 tablespoons of butter
– Salt to taste

Instructions

1. Preheat the oven to 350°F.

2. Heat a large skillet over medium heat and add the olive oil.

3. Add the rabbit to the skillet and brown on all sides.

4. Once the rabbit is browned, add the garlic and onion and cook until the onion is softened.

5. Add the oregano, tomato paste, and white wine to the skillet and stir to combine.

6. Simmer for 5 minutes, then add the chicken broth.

7. Bring to a boil, then reduce heat to low and simmer for 15 minutes.

8. Season with salt and pepper, then add the butter and stir until melted.

9. Transfer the rabbit and sauce to a baking dish.

10. Cover and bake for 45 minutes, or until the rabbit is cooked through.

11. Serve hot.
