4 quail
1 tablespoon of olive oil
Salt and pepper to taste


1. Preheat oven to 375°F.

2. Rinse the quail in cold water and pat dry with paper towels.

3. Heat a large skillet over medium-high heat.

4. Add olive oil to the pan and swirl to coat the bottom of the pan.

5. Add quail to the pan, season with salt and pepper.

6. Sear quail for 2 minutes on each side, or until golden brown.

7. Place the quail in a roasting pan and transfer to the preheated oven.

8. Roast the quail for 15 minutes, or until the internal temperature reaches 165°F.

9. Remove from the oven and let sit for 5 minutes before serving.
