How To Cook Perogies
Perogies are a delicious, traditional Eastern European dish that is made from a dough filled with potato, cheese, and other ingredients, and boiled or fried in butter. Perogies are a favorite of many and can be served as a side dish, appetizer, or even as the main course. Here is how to make perogies at home.
Ingredients:
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 2 eggs
– 4 tablespoons of butter, melted
– 1/2 cup of warm water
– 2 cups of mashed potatoes
– 1/2 cup of grated cheese
– Your choice of other fillings such as bacon, onion, garlic, sauerkraut, mushrooms, and spinach
Instructions:
1. Begin by making the dough. In a large bowl, mix together the flour, salt, eggs, butter, and warm water until the dough comes together and is smooth.
2. Turn the dough onto a lightly floured work surface and knead for about 5 minutes, or until it is smooth and elastic.
3. Form the dough into a ball and cover with a damp cloth. Let it rest for about 30 minutes.
4. While the dough is resting, prepare the filling. In a medium bowl, mix together the mashed potatoes, cheese, and other desired fillings.
5. Roll the dough out onto a lightly floured work surface until it is about 1/8 inch thick.
6. Cut the dough into circles using a biscuit cutter or the rim of a drinking glass.
7. Place a teaspoon of the filling onto the center of each circle.
8. Moisten the edges of the dough with a little water and fold into a half-moon shape. Pinch the edges together to seal.
9. Bring a large pot of salted water to a boil.
10. Carefully drop the perogies into the boiling water and cook until they rise to the surface. This will take about 5 minutes.
11. Remove the perogies from the water with a slotted spoon and place them onto a plate.
12. Serve the perogies with butter, sour cream, and your favorite toppings. Enjoy!
