Ingredients

Pernil: Approximately 4 to 5 lbs.

Garlic: 6 cloves, peeled and minced

Olive oil: 2 tablespoons

Salt: 2 tablespoons

Freshly ground black pepper: 2 teaspoons

Ground cumin: 2 teaspoons

Ground oregano: 2 teaspoons

Sofrito: 1/2 cup

Orange juice: 1/4 cup

Instructions

1. Preheat the oven to 375 degrees.

2. Pat the pork dry and make several shallow incisions on the surface.

3. In a small bowl, mix together the garlic, olive oil, salt, pepper, cumin, oregano, and sofrito until combined.

4. Rub the mixture into the pork, making sure to cover the entire surface.

5. Place the pork in a baking pan and add the orange juice.

6. Cover the pan with aluminum foil and bake for 1 hour.

7. Remove the foil and bake for an additional 30 minutes, or until the internal temperature of the pork reaches 165 degrees.

8. Let the pork rest for 10 minutes before slicing and serving. Enjoy!
