How To Cook Oxtail

1 kg oxtail
2 tablespoons olive oil
4 cloves garlic, minced
1 large onion, diced
2 celery stalks, chopped
2 carrots, chopped
1 teaspoon dried thyme
1 teaspoon smoked paprika
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 cup red wine
2 cups beef stock
2 bay leaves
1. Preheat oven to 350F (175C).
2. Heat olive oil in a large ovenproof pot or Dutch oven over medium-high heat.
3. Add oxtail pieces and cook until well browned, about 5 minutes per side.
4. Transfer oxtail pieces to a plate and set aside.
5. Add garlic, onion, celery, and carrots to the pot and cook until tender, about 5 minutes.
6. Add thyme, paprika, tomato paste, and Worcestershire sauce and stir until combined.
7. Add wine and scrape up any brown bits from the bottom of the pot.
8. Add beef stock, bay leaves, and the oxtail pieces.
9. Bring to a boil, then cover and transfer to the preheated oven.
10. Cook for 2 hours, or until meat is tender and falls off the bone.
11. Remove from the oven and let cool for 10 minutes before serving.
