1 lb. dry navy beans

1 1/2 tsp. salt

2 Tbsp. olive oil

1/2 onion, diced

2 cloves garlic, minced

6 cups of water


1. Begin by sorting and rinsing the navy beans. Place them in a large pot or bowl and cover with water. Let sit for at least 8 hours or overnight.

2. Drain and rinse the navy beans and set them aside.

3. In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they are translucent, about 5 minutes. Add the garlic and sauté for an additional 2 minutes.

4. Add the navy beans, salt, and water to the pot. Stir to combine.

5. Bring the mixture to a boil, reduce the heat to low, and simmer for 2-3 hours, stirring occasionally.

6. Once the navy beans are tender, turn off the heat and let them sit for 10-15 minutes, stirring occasionally.

7. Serve warm with your favorite sides. Enjoy!
