How To Cook Menudo

• 2 tablespoons of olive oil
• 2 pounds of cubed pork shoulder
• 2 cloves of garlic, minced
• 1 large onion, chopped
• 2 tablespoons of tomato paste
• 2 tablespoons of chili powder
• 1 teaspoon of ground cumin
• 1 teaspoon of dried oregano
• 1 teaspoon of salt
• 1/2 teaspoon of ground black pepper
• 1 (14.5 ounce) can of diced tomatoes
• 2 (15 ounce) cans of hominy, drained
• 2 cups of beef broth
• 1/4 cup of fresh cilantro, chopped
• Lime wedges, for garnish


1. Heat the olive oil in a large pot over medium heat. Add the pork and cook until browned. Add the garlic, onion, tomato paste, chili powder, cumin, oregano, salt, and pepper. Cook for 5 minutes, stirring occasionally.

2. Add the tomatoes, hominy, and beef broth. Bring to a boil, reduce heat to low and simmer for 45 minutes, stirring occasionally.

3. Stir in the cilantro and simmer for an additional 15 minutes.

4. Serve with lime wedges. Enjoy!
