– 1 lb of dried lima beans
– 2 quarts of water
– Salt, to taste
– Optional add-ins: onion, garlic, bay leaves, herbs, spices


1. Start by sorting through the lima beans and discarding any that are discolored or damaged. Rinse the beans to remove any dirt or debris.

2. Place the beans in a large pot and cover with the two quarts of water.

3. Bring the beans to a rolling boil over medium-high heat.

4. Once the beans have reached a boil, reduce the heat to low and cover the pot. Let the beans simmer for at least an hour, or until the beans are soft and tender.

5. During the last 15 minutes of cooking, add the desired seasonings, such as salt, onion, garlic, bay leaves, herbs, or spices.

6. Once the beans are soft, remove the pot from heat. Drain the cooking liquid, reserving some for later if desired.

7. Serve the beans warm as a side dish or as part of a main course. Enjoy!
