2 pounds of kombucha squash
1 tablespoon olive oil
1 teaspoon garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper


1. Preheat oven to 400°F.

2. Slice the squash into thin slices, about 1/4 inch thick, discarding the ends.

3. Place the slices in a large bowl and drizzle with the olive oil.

4. Sprinkle the garlic, salt, and freshly ground black pepper over the slices and stir to combine.

5. Place the slices on a baking sheet lined with parchment paper and bake for 15 minutes.

6. Flip the slices and bake for an additional 10 minutes, or until the squash is tender and lightly golden.
