Heating the Wok

Once you have the right equipment, it’s time to heat the wok. Place the wok over high heat and let it heat up for several minutes. The wok should be hot enough that a drop of water sizzles and evaporates immediately. If you don’t have a thermometer, test the wok with a few pieces of onion or garlic. If they start to brown quickly, the wok is hot enough.

Adding the Oil

Once the wok is hot, it’s time to add the oil. Use a neutral oil such as canola, peanut, or vegetable oil for best results. Swirl the oil in the wok to coat the entire surface. If the oil starts to smoke, reduce the heat and let it cool before continuing.
