How To Cook Gumbo

1/4 cup vegetable oil
2 tablespoons all-purpose flour
1 medium onion, chopped
1 large green pepper, chopped
2 cloves garlic, minced
1 1/2 cups chicken broth
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes
2 cups cooked chicken, diced
1/2 pound smoked sausage, sliced
1/4 pound cooked shrimp
1/4 cup chopped green onion
1/4 cup chopped fresh parsley


1. Heat the vegetable oil in a large pot over medium heat. Stir in the flour, and cook, stirring constantly, until the mixture is lightly browned, about 5 minutes.

2. Mix in the onion and green pepper; cook until the vegetables are tender, stirring occasionally. Mix in the garlic, and cook for 1 minute.

3. Pour in the chicken broth; stir in the oregano, thyme, cayenne pepper, and black pepper. Increase heat to high, and bring to a boil. Mix in tomatoes, and reduce heat to low. Simmer for 25 minutes.

4. Mix in the chicken and sausage; simmer for 10 minutes. Add the shrimp; cook for 5 minutes. Stir in the green onion and parsley; cook for 1 minute. Serve over hot cooked rice.
