1 pound of dried Great Northern beans
1 Tablespoon of olive oil
1 onion, diced
1 teaspoon of garlic, minced
1 teaspoon of thyme
2 bay leaves
6 cups of vegetable broth
1 teaspoon of salt
1/2 teaspoon of black pepper


1. Put the beans in a large bowl and cover with at least 2 inches of cold water. Let the beans soak for 8 hours or overnight.

2. Drain and rinse the beans before cooking.

3. Heat the olive oil in a large pot over medium heat.

4. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

5. Add the beans, thyme, bay leaves, vegetable broth, salt and pepper.

6. Bring the mixture to a boil, then reduce the heat and simmer for 1 1/2 to 2 hours, stirring occasionally, until the beans are tender.

7. Adjust the seasonings to taste.


Serve the beans as is or use them in your favorite recipe. Enjoy!
