Ingredients:

2-3 cups of all-purpose flour
1 teaspoon of salt
2 eggs
3/4 cup of water

Instructions:

1. In a large bowl, combine the flour and salt. Mix together until well blended.
2. In a separate bowl, beat the eggs. Add the water to the eggs and whisk until blended.
3. Make a well in the flour mixture and pour the egg mixture into it. Using a fork, gradually stir the mixture together, until all the flour is incorporated.
4. Turn the dough out onto a lightly floured work surface and knead the dough until it is smooth, about 5 minutes.
5. Cut the dough into 8 equal pieces and roll each piece into a long rope about 1/2 inch thick. Cut the ropes into 1 inch pieces.
6. Place the gnocci pieces on a lightly floured baking sheet.
7. Bring a large pot of salted water to a boil. Drop the gnocci into the boiling water and cook for 2-3 minutes, or until the gnocci are tender and rise to the top of the pot.
8. Drain the cooked gnocci and serve with your favorite sauce. Enjoy!
