– 1 Eye of Round Roast
– 2 tablespoons of olive oil
– Salt and pepper to taste
– Vegetables of your choice (carrots, onions, potatoes, etc)


1. Preheat oven to 350 degrees Fahrenheit.

2. Heat a large oven-safe skillet over medium-high heat.

3. Rub the Eye of Round roast with olive oil, salt and pepper.

4. Place the roast in the skillet and sear each side for 3 to 4 minutes, until it has a golden brown color.

5. Turn off the heat and add vegetables to the skillet, arranging them around the roast.

6. Place the skillet in the preheated oven and cook for approximately 25 minutes.

7. Remove the skillet from the oven and check the internal temperature of the roast with an instant-read thermometer. The roast is done when it reaches an internal temperature of 140 degrees Fahrenheit.


8. Let the roast rest for at least 5 minutes before slicing.

9. Slice the roast and serve with the vegetables. Enjoy!
