Ingredients

1 lb. chitlins (chitterlings)
Water
Baking soda
Salt
Pepper

Instructions

1. Thoroughly rinse the chitlins under cold, running water.
2. Place the chitlins in a large pot and cover with cold water.
3. Add 1 teaspoon of baking soda and bring to a boil.
4. Boil the chitlins for 1 to 1 ½ hours, until they are tender.
5. Drain the chitlins and rinse in cold water.
6. Place a large skillet or pot over medium heat.
7. Add the chitlins and season with salt and pepper to taste.
8. Stir-fry the chitlins for 15-20 minutes until they are lightly browned and crispy.
9. Serve hot. Enjoy!
