Ingredients
– 2lb carrots, peeled and cut into 1/2 inch thick rounds
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 1 tablespoon honey
Instructions
1. Preheat oven to 375°F.
2. Place carrots in a large bowl and drizzle with olive oil. Add salt and pepper and toss to coat.
3. Spread carrots in a single layer on a large baking sheet.
4. Bake for 25-30 minutes, stirring once during cooking.
5. Drizzle honey over carrots and stir to coat. Return to oven for an additional 5 minutes.
6. Remove from oven and serve warm. Enjoy!
