2 tablespoons olive oil
2 cloves garlic, minced
1/2 onion, diced
3 cups cactus leaves, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon chili powder
Salt and pepper to taste
1/2 cup water


1. Heat the oil in a large skillet over medium heat. Add the garlic, onion and cactus leaves and cook for 3-4 minutes, stirring often.

2. Add the cumin, coriander, chili powder, salt and pepper and stir to combine.

3. Pour the water into the skillet and reduce the heat to low. Simmer for 8-10 minutes, stirring occasionally, until the cactus leaves are tender.

4. Serve hot as a side dish, or use as a filling for tacos, burritos, enchiladas or quesadillas. Enjoy!
