How To Cook Boudin

1 lb. pork, diced
1 lb. pork liver, diced
2 cups cooked white rice
1 onion, diced
1 bell pepper, diced
1 stalk celery, diced
1/4 cup parsley, chopped
1 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon ground sage
1 teaspoon cayenne pepper
1 teaspoon black pepper
Salt to taste
2 cups chicken or pork stock


1. Preheat oven to 350°F.

2. Heat a large skillet over medium-high heat. Add in the pork and liver and cook until browned, stirring occasionally.

3. Add the onion, bell pepper, celery, parsley, garlic powder, thyme, sage, cayenne pepper, black pepper, and salt to taste. Cook until the vegetables are softened, about 5 minutes.

4. Add the cooked rice and chicken or pork stock and mix to combine.

5. Transfer the mixture to a 9×13 inch baking dish.

6. Bake for 30 minutes, or until the boudin is cooked through.

7. Serve hot. Enjoy!
