– 4-5 lb boneless prime rib roast
– Coarse salt
– Freshly ground black pepper
– 2-3 cloves garlic, minced
– 3-4 tablespoons olive oil


1. Preheat oven to 450°F.

2. Pat the prime rib roast dry with paper towels. Using a sharp knife, make 1/2-inch-deep cuts all over the roast. Rub the roast all over with salt, pepper and garlic.

3. Heat the olive oil in a large roasting pan over medium-high heat. Add the prime rib roast and cook until it is browned on all sides, about 5 minutes per side.

4. Transfer the roast to a roasting rack set inside a roasting pan. Roast in the preheated oven for 15 minutes.

5. Reduce the oven temperature to 350°F and continue to roast for another 1 ½ to 2 hours, or until the internal temperature of the roast reaches 130°F for medium-rare.

6. Remove the roast from the oven and let it rest for 10 minutes before carving.


Slice the prime rib roast and serve with your favorite side dishes. Enjoy!
