Ingredients

• 2 small to medium-sized bitter melons
• 1/2 teaspoon of oil
• 1/2 teaspoon of salt
• 1/2 teaspoon of ground black pepper
• 1 teaspoon of minced garlic
• 1 teaspoon of minced ginger
• 1 tablespoon of soy sauce
• 2 tablespoons of sesame oil

Instructions

1. Begin by prepping the bitter melon. Cut the ends off of the melons, then slice them in half lengthwise. Scoop out the seeds and any fleshy fibers that are inside. Then cut the melon into 1/4-inch slices.

2. Heat a large skillet over medium heat, then add the oil. When the oil is hot, add the bitter melon slices and cook for about 3-4 minutes.

3. Add the salt, pepper, garlic, and ginger. Cook for another minute, stirring often.

4. Add the soy sauce and sesame oil and cook for another 2-3 minutes. The bitter melon should be tender but still slightly crisp.
