Ingredients
– 6 medium beets
– 1 onion, diced
– 2 tablespoons olive oil
– 1 teaspoon sea salt
– 1/4 teaspoon ground black pepper
– 2 tablespoons red wine vinegar
– 2 tablespoons honey
Instructions
1. Preheat the oven to 400°F.
2. Scrub the beets and trim the ends. Place the beets in a baking dish and roast in the preheated oven for 45 minutes, or until the beets are tender when pierced with a fork.
3. Remove the beets from the oven and let cool. Once cool enough to handle, peel the beets and cut into cubes.
4. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 5 minutes, or until the onion is translucent.
5. Add the cubed beets to the skillet and cook for an additional 5 minutes.
6. Add the sea salt, ground black pepper, red wine vinegar and honey. Stir to combine and cook for an additional 5 minutes.
7. Serve the beets warm. Enjoy!
