Step 1: Preparing the Backstrap
First, take the backstrap and remove any silver skin present. Use a sharp knife to make shallow cuts in the meat, and then use your fingers to pull off the silver skin. Be careful not to cut too deep into the meat.
Step 2: Marinating the Meat
Once the silver skin is removed, place the backstrap in a shallow dish. Pour in enough olive oil to cover the meat. Add a teaspoon of garlic and a tablespoon of soy sauce. Mix to combine, then cover the dish with plastic wrap and let it sit in the refrigerator for at least two hours.
Step 3: Cooking the Meat
Once the meat has marinated, heat a skillet over medium-high heat. Add a tablespoon of butter to the pan, and let it melt. Remove the backstrap from the marinade and place it in the pan. Cook for 3-5 minutes on each side, or until the meat is cooked through.
Step 4: Finishing the Dish
