1 large artichoke
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons butter
Salt and pepper, to taste
1. Preheat oven to 400°F.
2. Wash the artichoke under cold running water and cut off the stem. Cut the top off the artichoke, about 1 to 2 inches down, and discard.
3. Cut the lemon in half and squeeze the juice over the artichoke and inside the leaves, to prevent it from discoloring.
4. Place the artichoke in a baking dish and stuff the garlic, olive oil, and butter into the center. Sprinkle with salt and pepper.
5. Bake for 45 minutes, or until the leaves are tender and the bottom is golden brown.
Once cooked, allow the artichoke to cool for a few minutes before serving. Serve with a dipping sauce, such as mayonnaise, aioli, or hollandaise. Enjoy!
