Ingredients

– 4 large artichokes
– 2 tablespoons of salt
– 4 lemons, quartered
– 4 cloves of garlic, peeled and smashed
– 2 tablespoons of black peppercorns
– 1/2 cup of olive oil
– 4 cups of water

Instructions

1. Start by preparing the artichokes. Cut off the top third of the artichoke, then snip off the sharp points of the remaining leaves. Peel the stem and cut off the bottom of the artichoke.

2. Fill a large pot with the water, salt, lemons, garlic, and peppercorns. Bring to a boil, then add the artichokes. Cover the pot and reduce the heat to low. Simmer for 30 minutes, or until the artichokes are tender.

3. Drain the artichokes and let cool for 10 minutes.

4. In a large bowl, combine the olive oil and lemon juice. Add the artichokes and toss to coat. Serve warm.

Tips

– You can also steam the artichokes by adding 1/2 cup of white wine to the pot and steaming for 25 minutes.
