Ingredients
• 2 pounds of alligator meat
• 2 tablespoons of vegetable oil
• Salt and pepper
• 2 tablespoons of butter
• 2 cloves of garlic, minced
• 1 onion, diced
• 2 tablespoons of all-purpose flour
• 1 cup of chicken broth
• 2 tablespoons of tomato paste
• 2 tablespoons of Worcestershire sauce
• 1 teaspoon of hot sauce
• 2 tablespoons of fresh parsley, chopped
Instructions
1. Cut the alligator meat into 1-inch cubes.
2. Heat the oil in a large skillet over medium-high heat.
3. Add the alligator meat to the skillet and season with salt and pepper.
4. Cook the alligator meat for about 5 minutes, stirring occasionally, until it is golden brown.
5. Reduce the heat to medium and add the butter, garlic, and onion.
6. Cook for about 3 minutes, stirring occasionally, until the onion is softened.
7. Add the flour and cook for about 1 minute, stirring constantly.
8. Slowly stir in the chicken broth, tomato paste, Worcestershire sauce, and hot sauce.
9. Bring the mixture to a boil, reduce the heat to low, and simmer for about 15 minutes.
10. Taste and adjust the seasoning if needed.
