Preparation

To begin cooking Al Pastor meat, you will need to gather the following ingredients:

  • 2 pounds pork shoulder, cut into cubes
  • 1/3 cup pineapple juice
  • 1/4 cup white vinegar
  • 1/4 cup orange juice
  • 2 tablespoons achiote paste
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Cooking

Once all of the ingredients are gathered, the cooking process can begin.

  1. In a medium bowl, combine pineapple juice, vinegar, orange juice, achiote paste, cumin, garlic powder, oregano, pepper, and salt. Mix until all ingredients are fully incorporated.
  2. Place pork cubes in a large resealable bag, pour in marinade, and mix until pork cubes are fully covered. Place in the refrigerator and marinate for at least 4 hours.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add pork cubes, including marinade, to the skillet and cook for 5 minutes, stirring occasionally.
  5. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
  6. Serve and enjoy!

Serving

Al Pastor meat is most often served as tacos or burritos. It can also be served with rice, beans, and other Mexican side dishes for a complete meal.
