1 (4- to 6-pound) standing rib roast
2 tablespoons of salted butter, softened
2 cloves of garlic, minced
1 tablespoon of fresh thyme leaves, minced
2 teaspoons of kosher salt
1 teaspoon of freshly ground black pepper


1. Preheat oven to 500°F.
2. Remove roast from refrigerator and bring to room temperature. Pat dry with paper towels.
3. In a small bowl, combine butter and garlic. Mix until combined.
4. Rub the mixture all over the roast. Sprinkle with thyme leaves, salt, and pepper.
5. Place roast on a roasting rack in a roasting pan.
6. Place in preheated oven and roast for 20 minutes.
7. Reduce heat to 325°F and continue to roast for about 1 hour and 15 minutes, or until a meat thermometer inserted into the center of the roast reads 130°F for medium-rare or 140°F for medium.
8. Remove from the oven and let rest for 15-20 minutes before slicing.
9. Slice and serve. Enjoy!
