How To Cook A Pig In The Ground

Cooking a pig in the ground is an ancient cooking technique that takes advantage of the earth’s natural insulation to create a moist and flavorful meal. This method of cooking is called “imu” and has been used for centuries by Hawaiian and Polynesian cultures to cook a variety of meats, vegetables, and starches.


– Whole pig, cleaned and prepared for cooking
– 2-3 banana leaves
– 4-5 sweet potatoes
– Salt and pepper to taste
– Aluminum foil
– Rocks and soil to cover the pig


1. Begin by digging a hole in the ground that is approximately 3 feet deep and wide enough to fit the pig.

2. Place a layer of aluminum foil at the bottom of the hole.

3. Place the pig on top of the foil and season with salt and pepper.

4. Place the sweet potatoes and banana leaves around the pig in the hole.

5. Cover the pig with another layer of aluminum foil and then cover the entire hole with rocks and soil.

6. Build a fire on top of the rocks and soil and let it burn for about two hours.

7. Then, reduce the heat and let the fire slowly burn for another two hours.

8. After four hours of cooking, remove the rocks and soil from the hole and check if the pig is cooked through.

9. If the pig is cooked through, remove it from the hole and serve it with the sweet potatoes and banana leaves.


– Make sure to dig the hole in a safe area, away from any flammable materials.
– To test if the pig is cooked through, use a meat thermometer to check the internal temperature.
– Make sure to have plenty of water and sand nearby to put out the fire.
– For best results, use a seasoned firewood to build the fire.
– If needed, you can also add more banana leaves and sweet potatoes while the pig is cooking.
