Ingredients:
– 2 filet mignon steaks, each about 1 inch thick
– 2 tablespoons olive oil
– 2 tablespoons butter
– Salt and pepper, to taste
– Optional: Fresh herbs such as rosemary, thyme and garlic, minced
Instructions:
1. Preheat a heavy-bottomed skillet, such as cast iron, over medium-high heat.
2. Rub each filet mignon steak with olive oil and season both sides with salt and pepper.
3. Place the steaks in the hot skillet and cook for 3 minutes on each side.
4. Reduce the heat to medium and add the butter and fresh herbs, if using.
5. Baste the steaks with the butter and herbs for another 2 minutes on each side.
6. Remove the steaks from the skillet and allow them to rest for 5 minutes before serving.
