Ingredients

1 conch
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon red pepper flakes
1/2 cup fresh cilantro, chopped
2 tablespoons olive oil

Instructions

1. Start by cleaning the conch. If the conch is already cleaned, you can skip this step. To clean the conch, wash it under cold running water to remove any sand and debris. Use a stiff brush to scrub the shell and remove any barnacles.

2. Once the conch is cleaned, cut it into small cubes.

3. In a large skillet, heat the olive oil over medium heat.

4. Add the diced onion, bell pepper, garlic, oregano, cumin, and red pepper flakes. Cook for about 5 minutes, stirring frequently, until the vegetables are tender.

5. Add the conch cubes to the skillet and cook for about 5 minutes, stirring occasionally, until the conch is cooked through.

6. Remove the skillet from the heat and stir in the chopped cilantro.
