• 2 quarts of water
• Salt (optional)
Instructions:
1. Rinse the black-eyed peas in a colander with cold water, to remove any dirt.
2. Place the black-eyed peas in a large pot and cover them with the two quarts of water.
3. Bring the pot to a boil, and reduce the heat to medium-low.
4. Simmer the black-eyed peas for 45 minutes, or until they are tender.
5. If desired, add a pinch of salt to the pot for flavor.
