• 1 bunch of fresh beet greens
• 2 tablespoons of olive oil
• 1 garlic clove, minced
• Salt and pepper to taste


1. Begin by washing the beet greens. Fill a large bowl with cold water and add the greens. Swirl the greens around and then drain. Repeat this process until the water is clear.

2. Remove the stems from the greens. To do this, hold the stem with one hand and use the other to grasp the leaves and pull them away from the stem. Discard the stems and set aside the leaves.

3. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the garlic and cook for 1-2 minutes, stirring frequently.

4. Add the beet greens to the skillet and toss to coat in the garlic and oil. Sprinkle with salt and pepper and cook, stirring occasionally, for 3-4 minutes, until the greens are wilted and tender.

5. Serve the greens warm. Enjoy!
