– 4 loin lamb chops
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon fresh rosemary, minced
– 1 teaspoon fresh thyme, minced
– 2 tablespoons freshly squeezed lemon juice
– Salt and freshly ground black pepper, to taste


1. Preheat oven to 375 degrees F (190 degrees C).

2. Heat the olive oil in a large skillet over medium-high heat. Add the lamb chops and sear for 3 minutes on each side, or until lightly browned.

3. Transfer the lamb chops to a roasting pan.

4. In a small bowl, mix together the garlic, rosemary, thyme, and lemon juice. Season with salt and pepper to taste.

5. Spread the mixture over the lamb chops, making sure to cover them completely.

6. Roast in the preheated oven for 25 to 30 minutes, or until cooked through. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

7. Serve hot. Enjoy!
