Ingredients

-2 Japanese eggplants
-2 tablespoons of olive oil
-Salt and pepper to taste
-Optional: 2 tablespoons of soy sauce, 1 tablespoon of sesame oil

Instructions

1. Preheat your oven to 400°F.

2. Cut the ends off of the eggplant and then cut it into 1/2 inch thick rounds.

3. Place the eggplant slices on a baking sheet lined with parchment paper.

4. Drizzle the olive oil over the eggplant slices and then season with salt and pepper to taste.

5. Place the baking sheet in the preheated oven and bake for 20 minutes, flipping the eggplant slices halfway through.

6. Remove the eggplant slices from the oven when they are golden brown and lightly crispy.

7. Optional: To make the eggplant extra flavorful, mix together the soy sauce and sesame oil in a small bowl and brush the mixture over the eggplant slices.

8. Serve the eggplant hot as a side dish or as part of a main meal. Enjoy!
