2 tablespoons allspice
2 teaspoons nutmeg
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried thyme
2 teaspoons smoked paprika
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
1 teaspoon sea salt
1 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup dark rum
1/4 cup soy sauce
1/4 cup olive oil
2 tablespoons honey
2 tablespoons brown sugar
2 tablespoons fresh ginger, grated
2 tablespoons fresh garlic, minced
4 pounds chicken, cut into pieces
1. In a small bowl, mix together the allspice, nutmeg, garlic powder, onion powder, thyme, smoked paprika, cloves, cinnamon, cayenne pepper, black pepper, and sea salt.
2. In a separate bowl, whisk together the orange juice, lime juice, dark rum, soy sauce, olive oil, honey, brown sugar, ginger, and garlic.
3. Place the chicken pieces in a large bowl and pour the marinade over them. Use your hands to coat the chicken evenly with the marinade. Cover the bowl and place it in the refrigerator for at least 4 hours, or overnight.
4. Preheat the oven to 375°F (190°C).
5. Line a baking sheet with parchment paper and place the chicken pieces on the sheet.
6. Bake the chicken for 45 minutes, or until the chicken is cooked through and the juices run clear.
