– 2 tablespoons of olive oil
– 1 pound of chicken of the woods, sliced into 1/2 inch thick slices
– 1 teaspoon of sea salt
– 1/2 teaspoon of freshly ground black pepper
– 2 cloves of garlic, minced
– 1/4 cup of white wine
– 1/4 cup of chicken broth
– 1 tablespoon of butter
– 2 tablespoons of freshly chopped parsley


1. Preheat the oven to 400 degrees F.

2. Heat the olive oil in a large oven-proof skillet over medium-high heat.

3. When the oil is hot, add the chicken of the woods slices and season with salt and pepper. Cook for about 5 minutes, or until the mushrooms are lightly browned.

4. Add the garlic and cook for an additional minute.

5. Add the white wine and chicken broth and bring to a simmer.

6. Reduce the heat to low and cover the skillet with a lid. Simmer for about 10 minutes, or until the liquid has reduced by half.

7. Add the butter and stir to combine.

8. Transfer the skillet to the preheated oven and bake for 15 minutes.

9. Remove the skillet from the oven and top with the freshly chopped parsley.

10. Serve the chicken of the woods immediately. Enjoy!
