Preparing the Chicken Gizzards
Before you can cook chicken gizzards, they need to be prepped. Start by rinsing the gizzards in cold water. Remove any fat or connective tissue that may be present. If the gizzards are large or tough, cut them into small, bite-sized pieces.
Soaking the Gizzards
Once you have prepped the gizzards, you need to soak them in brine for at least one hour. To make the brine, mix together one cup of salt, one cup of brown sugar, and one gallon of cold water. Place the gizzards in the brine and let them soak for an hour or more.
Cooking the Gizzards
After the gizzards are done soaking, remove them from the brine and rinse them in cold water again. Place them into a pot and cover with cold water. Bring the pot to a boil, then reduce the heat and simmer for 45 minutes to one hour. Add any desired seasonings, such as garlic, pepper, or thyme, during the last 15 minutes of cooking.
Testing for Doneness
When the gizzards are done cooking, use a fork to make sure they’re tender. If they are still tough, cook for an additional 15 minutes and test again. Once the gizzards are tender, remove them from the heat and serve.
