How To Cook Chicken And Dumplings

– 4 boneless chicken breasts
– 4 cups chicken broth
– 2 tablespoons butter
– 1 onion, diced
– 2 celery stalks, diced
– 2 carrots, diced
– 2 cloves garlic, minced
– 2 tablespoons all-purpose flour
– 1 teaspoon dried thyme
– 2 tablespoons fresh parsley, chopped
– Salt and pepper, to taste
– 2 cups biscuit mix
– 2/3 cup milk


1. Preheat oven to 350 degrees F.

2. Place chicken breasts in a 9×13 inch baking dish and pour chicken broth over the top. Cover with foil and bake for 25 minutes or until chicken is cooked through.

3. Remove chicken from the baking dish and set aside. Reserve the cooking liquid.

4. In a large pot, melt butter over medium heat. Add onion, celery, carrots, and garlic and cook until vegetables are softened, about 5 minutes.

5. Stir in flour and thyme. Cook, stirring constantly, for 1 minute.

6. Slowly add reserved cooking liquid, stirring constantly, until it comes to a simmer.

7. Add chicken and parsley. Simmer for 10 minutes.

8. In a small bowl, combine biscuit mix and milk with a fork until a soft dough forms.

9. Drop spoonfuls of biscuit dough into the simmering stew. Simmer for 10 minutes, or until dumplings are cooked through.

10. Serve warm with your favorite sides. Enjoy!
