1 4-pound whole chicken
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1 onion, quartered
2 carrots, cut into chunks
2 celery stalks, cut into chunks
1/2 cup chicken broth
2 tablespoons butter


1. Pat the chicken dry with paper towels and season with salt, pepper, garlic powder, onion powder, paprika, oregano, and thyme.

2. Place the quartered onion, carrots, and celery into the bottom of the Instant Pot. Place the seasoned chicken on top.

3. Pour in the chicken broth and dot the chicken with butter.

4. Secure the lid and set the steam release handle to the “Sealing” position.

5. Select the “Poultry” setting and set the timer for 25 minutes.

6. When the cooking cycle is complete, let the pressure release naturally for 10 minutes and then do a quick release.

7. Carefully remove the chicken from the Instant Pot and let it rest for 10 minutes before carving.


-Be sure to thoroughly pat the chicken dry with paper towels before seasoning it.

-Save the cooking liquid in the Instant Pot to use as a base for a delicious soup.
