Ingredients

1 whole chicken (about 4 to 5 pounds in weight)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon garlic powder

Salt and freshly ground pepper

1 cup of chicken broth

1 onion, chopped

2 cloves of garlic, minced

Instructions

1. Begin by seasoning the chicken with the olive oil, thyme, rosemary, garlic powder, salt, and pepper. Make sure to rub the seasoning into the skin of the chicken.

2. Place the chicken in the crockpot and add the chicken broth.

3. Add the onion and garlic to the crockpot and stir to combine.

4. Cook the chicken on low for 6 to 8 hours, or until the chicken is cooked through and the juices run clear.

5. Once the chicken is cooked through, remove it from the crockpot and let it rest for 10 minutes before carving and serving.

Tips

1. If you want to add additional flavor to the chicken, try adding some diced carrots and celery to the crockpot.

2. If the chicken is cooked through but the skin is still soft, you can place it under the broiler for 2 to 3 minutes to crisp up the skin.
