Step 1: Spatchcock the Chicken

The first step to spatchcocking a chicken is to remove the backbone. Using sharp kitchen shears, cut along both sides of the backbone to remove it. Next, press down on the chicken to flatten it. This will allow the heat to evenly cook the chicken.

Step 2: Season the Chicken

Once the chicken is spatchcocked, season it liberally with salt, pepper, and any other herbs and spices you like. Rub the seasonings into the skin and into the cavity of the chicken. Make sure you season under the skin as well to get the most flavor out of the chicken.
