– 2 ½ lbs. beef short ribs
– 2 tablespoons oil
– 1 teaspoon each of garlic powder, chili powder, onion powder, smoked paprika, and freshly cracked black pepper
– 2 tablespoons Worcestershire sauce
– 2 tablespoons tomato paste
– 2 cups beef stock
– 2 tablespoons soy sauce
– 2 tablespoons brown sugar
– 1 teaspoon balsamic vinegar
– 1 teaspoon Dijon mustard
– 2 bay leaves
– 2 sprigs fresh thyme


1. Preheat the oven to 350 degrees F.

2. Heat the oil in a large oven-proof pot over medium-high heat.

3. Pat the ribs dry with a paper towel and season both sides with the garlic powder, chili powder, onion powder, smoked paprika, and black pepper.

4. Once the pot is hot, add the ribs to the pot and sear each side for 2 minutes.

5. Mix together the Worcestershire sauce, tomato paste, beef stock, soy sauce, brown sugar, balsamic vinegar, and Dijon mustard and pour it over the ribs.

6. Add the bay leaves and fresh thyme to the pot.

7. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

8. Simmer the ribs for 1½ hours, stirring occasionally.

9. Once the ribs are cooked through, remove the lid and let the sauce reduce for 10 minutes.

10. Serve the ribs with the reduced sauce.
